200g udon noodles

4 tablespoons chili oil

3 garlic cloves, thinly sliced

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 green onion, finely chopped

1 red chili, sliced (optional for extra heat)

1 tablespoon sesame seeds (for garnish)

Fresh cilantro or parsley (for garnish)

Instructions
 

Cook Udon Noodles: Boil a pot of water and cook the udon noodles according to package instructions (usually 3-4 minutes). Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare Chili Oil: In a large pan or skillet, heat the chili oil over medium heat. Add the sliced garlic and sauté for about 1 minute until the garlic becomes fragrant and golden but not browned.

      Combine Flavors: Add the soy sauce, rice vinegar, and sesame oil to the skillet with the garlic and chili oil. Stir well to combine all the flavors, allowing the mixture to bubble gently for about 1 minute.

        Mix in Noodles: Add the drained udon noodles to the pan, tossing them gently in the chili oil mixture until they are evenly coated and heated through (about 2-3 minutes). If desired, add the sliced red chili for extra heat.

          Serve: Plate the noodles and garnish with chopped green onions, sesame seeds, and fresh cilantro or parsley.
