Ingredients

8 oz spaghetti (or pasta of choice)

2 cups fresh spinach, washed and roughly chopped

1 lemon (zest and juice)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (plus more for serving)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute, or until fragrant, being careful not to burn the garlic.

Add Spinach: Stir in the chopped spinach and sauté for 2-3 minutes until it wilts down.

Combine Pasta and Sauce: Add the drained pasta to the skillet with the sautéed spinach. Toss to combine.

Flavor it Up: Pour in the lemon juice and zest, and then add the reserved pasta water gradually, tossing well to coat the pasta. Start with a little water and add more if needed to achieve your desired creaminess.

Finish and Serve: Stir in the Parmesan cheese, season with salt and pepper to taste. Remove from heat and serve immediately, garnished with fresh basil leaves and extra Parmesan cheese.
