2 medium-sized apples (Granny Smith or Honeycrisp preferred), peeled and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/4 cup powdered sugar (for dusting)

Oil for frying (canola or vegetable oil)

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.

    In a separate bowl, combine the milk, egg, and vanilla extract. Beat until smooth.

      Gradually pour the wet mixture into the dry ingredients, stirring until just combined. Do not over-mix; it’s okay if small lumps remain.

        Fold in the diced apples until they’re evenly distributed throughout the batter.

          Heat about 2 inches of oil in a deep pan or fryer to 350°F (175°C). You can check the temperature with a kitchen thermometer or by carefully dropping a small spoonful of batter into the oil—if it sizzles and rises to the surface, it’s ready.

            Carefully drop spoonfuls of the apple batter into the hot oil. Avoid overcrowding the pan; fry in batches if necessary. Cook for about 2-3 minutes on each side, or until golden brown and cooked through.

              Using a slotted spoon, transfer the fritter bites to a paper towel-lined plate to drain excess oil.

                While still warm, dust the fritter bites with powdered sugar before serving.
