Ingredients

For the Asado Chicken:

4 chicken thighs (bone-in, skin-on)

2 tablespoons olive oil

1 tablespoon smoked paprika

1 tablespoon ground cumin

1 teaspoon dried oregano

4 cloves garlic, minced

Juice of 2 limes

Salt and black pepper to taste

Fresh cilantro, for garnish

For the Sautéed Lemon Zucchini:

2 medium zucchinis, sliced into thin rounds

2 tablespoons olive oil

1 clove garlic, minced

Juice of 1 lemon

Zest of 1 lemon

Salt and pepper to taste

1 tablespoon fresh parsley, chopped, for garnish

Instructions

Marinate the Chicken: In a large bowl, mix together the olive oil, smoked paprika, cumin, oregano, minced garlic, lime juice, salt, and pepper. Add the chicken thighs, ensuring they're well coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 4 hours for better flavor).

Cook the Chicken: Preheat your grill or oven to 400°F (200°C). If grilling, cook the marinated chicken skin-side down for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). If baking, place the chicken in a baking dish and roast for about 35-40 minutes, or until fully cooked and golden brown.

Make the Sautéed Lemon Zucchini: While the chicken is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

Sauté the Zucchini: Add the sliced zucchini to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender but still slightly crisp.

Add Lemon: Pour in the lemon juice and zest, then season with salt and pepper. Mix well, cooking for another minute. Remove from heat, and garnish with fresh parsley.

Serve: Plate the Asado chicken alongside the sautéed lemon zucchini, and sprinkle fresh cilantro over the chicken for a pop of color and flavor. Enjoy your vibrant and zesty meal!
