Instructions

Make the Dumpling Dough:

    - In a mixing bowl, combine the all-purpose flour and salt. Gradually add the water, mixing until a dough starts to form. Knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

      Prepare the Filling:

        - In another bowl, mix the ground pork, chopped green onions, minced ginger, minced garlic, soy sauce, sesame oil, chili oil, and season with salt and pepper. Combine well and set aside.

          Form the Dumplings:

            - Roll out the rested dough on a floured surface to about 1/8 inch thick. Cut into 3-inch circles. Place a teaspoon of the filling in the center of each circle. Carefully fold the dough over the filling, pinching the edges to seal tightly.

              Prepare the Soup Base:

                - In a large pot, bring the chicken or vegetable broth to a gentle simmer. Add the soy sauce, fish sauce, chili oil, and rice vinegar. Stir well.

                  Cook the Dumplings:

                    - Gently place the dumplings into the simmering broth. Let them cook for about 6-8 minutes or until they rise to the surface and are cooked through.

                      Add Vegetables:

                        - Add the chopped bok choy and julienned carrots to the soup. Let them cook for an additional 2-3 minutes until tender but still vibrant.

                          Serve:

                            - Ladle the soup into bowls, making sure to include dumplings and vegetables. Garnish with fresh cilantro and sliced jalapeƱos if desired. Drizzle with an extra splash of chili oil for added heat.
