Baked Feta Pasta

200g pasta (preferably penne or fusilli)

200g feta cheese block

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

¼ cup extra virgin olive oil

Salt and pepper to taste

Fresh basil leaves, for garnish

Parmesan cheese, for serving (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a baking dish, combine the halved cherry tomatoes, minced garlic, oregano, red pepper flakes, salt, and pepper. Drizzle with olive oil and mix well.

      Place the block of feta cheese in the center of the tomato mixture, squishing the tomatoes around it.

        Pour additional olive oil over the feta cheese and season it lightly with salt and pepper.

          Bake in the preheated oven for about 30 minutes, or until the tomatoes burst and the feta is golden and soft.

            While the feta and tomatoes bake, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente; drain.

              Once the feta and tomatoes are done baking, remove them from the oven. Use a fork to mash the feta and tomatoes together, combining everything into a creamy sauce.

                Add the cooked pasta directly into the baking dish and mix until the pasta is well coated with the sauce.

                  Serve hot, garnished with fresh basil leaves and a sprinkle of Parmesan cheese if desired.
