Ingredients

2 large ripe bananas, mashed

1/3 cup melted coconut oil (or unsalted butter)

1/2 cup granulated sugar

1/4 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/2 cup chopped walnuts (optional)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper.

In a medium mixing bowl, combine the mashed bananas and melted coconut oil. Mix until smooth.

Add both granulated and brown sugars to the banana mixture, stirring until combined.

Incorporate the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

In a separate bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Fold in the chocolate chips and chopped walnuts if using, ensuring they are evenly distributed.

Pour the batter into the prepared baking pan, smoothing it out evenly with a spatula.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (but no wet batter).

Allow the brownies to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely before cutting into squares.
