1 lb boneless, skinless chicken thighs

1/2 cup cornstarch

2 teaspoons garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

2 tablespoons vegetable oil

2 cups cooked jasmine rice (or rice of choice)

1 cup shredded carrots

1 cup cucumber, julienned

1/2 cup chopped scallions

1/4 cup chopped fresh cilantro (optional)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 teaspoon lime juice

Prepare the Chicken: In a bowl, combine the cornstarch, garlic powder, onion powder, paprika, salt, and pepper. Mix well. Cut the chicken thighs into bite-sized pieces and coat them with the seasoned cornstarch mixture, ensuring each piece is well coated.

    Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken pieces in a single layer, cooking in batches if necessary. Fry until golden brown and crispy, about 5-7 minutes. Remove from the skillet and let them drain on a paper towel.

      Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth and well combined. Adjust the spiciness by adding more Sriracha if desired.
