Ingredients

1 cup pearled barley

4 cups water or vegetable broth

1 cup almond milk (or any milk of choice)

2 tablespoons maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

Toppings: Fresh fruits (bananas, berries), nuts (walnuts, almonds), seeds (chia, flax), and a drizzle of honey or agave

Instructions

Rinse the Barley: Begin by rinsing the pearled barley under cold running water to remove any dust or impurities.

Cook the Barley: In a large pot, combine the rinsed barley and water (or vegetable broth) and bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let simmer for about 30-40 minutes, or until the barley is tender and has absorbed most of the liquid.

Add Milk and Flavorings: Once the barley is tender, stir in the almond milk, maple syrup, vanilla extract, cinnamon, and a pinch of salt. Stir well to combine and let cook for an additional 5-10 minutes on low heat, stirring occasionally until the mixture thickens to your desired consistency.

Prepare Toppings: While the porridge is finishing up, prepare your choice of toppings. Slice fresh fruits, chop nuts, and gather seeds to add texture and flavor to your porridge.

Serve: Spoon the warm barley porridge into bowls. Top generously with your chosen fruits, nuts, and seeds. Finish with an extra drizzle of honey or agave if desired.
