BBQ Chicken Grilled Cheese

Ingredients
  

1 cup cooked, shredded chicken

1/2 cup barbecue sauce (your favorite brand)

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

4 slices of bread (sourdough or ciabatta recommended)

1/4 cup unsalted butter, softened

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Chicken Mixture: In a medium bowl, combine the shredded chicken and barbecue sauce. Mix well until the chicken is thoroughly coated. Set aside.

    Cheese Blend: In another bowl, mix the shredded cheddar and mozzarella cheeses together. This blend will give your grilled cheese a nice gooey texture.

      Butter the Bread: Take your slices of bread and butter one side of each slice generously. Sprinkle garlic powder and onion powder evenly over the buttered sides for added flavor.

        Assemble the Sandwich: On the unbuttered side of two slices of bread, spread a generous amount of the BBQ chicken mixture, then top it with a handful of the cheese blend. Place the other slice of bread on top, buttered side facing out.

          Grill the Sandwich: Heat a skillet or griddle over medium heat. Once hot, place the sandwich in the pan. Grill for about 4-5 minutes on one side until it’s golden brown and the cheese starts to melt. Carefully flip the sandwich and grill the other side for an additional 4-5 minutes.

            Check for Melted Cheese: Once both sides are nicely browned and the cheese is melted, remove the sandwich from the pan. Allow it to cool for a minute before slicing it in half.
