BBQ Chicken Quesadilla

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1/2 cup red onion, thinly sliced

1/2 cup bell pepper, sliced (any color)

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Prepare the Chicken: In a bowl, mix the shredded chicken with BBQ sauce, garlic powder, and smoked paprika until evenly coated.

    Sauté the Veggies: In a skillet, heat olive oil over medium heat. Add the sliced red onion and bell pepper, sautéing for about 5 minutes or until they're tender. Remove from heat and set aside.

      Assemble the Quesadillas: Lay one flour tortilla on a flat surface. Sprinkle 1/4 cup of cheddar and 1/4 cup of mozzarella cheese evenly over the tortilla. Top with 1/2 cup of the BBQ chicken mixture and a portion of the sautéed veggies. Add another 1/4 cup of cheese on top before placing a second tortilla over it.

        Cook the Quesadilla: Heat a non-stick skillet over medium heat. Carefully place the assembled quesadilla in the skillet. Cook for 3-4 minutes on one side, until golden brown, then flip and cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

          Repeat: Remove the quesadilla from the skillet and keep warm while you repeat the process with the remaining ingredients.

            Slice and Serve: Cut each quesadilla into wedges, garnish with fresh cilantro, and serve with sour cream and salsa on the side.
