Ingredients

1 pound (450g) ground beef

2 tablespoons olive oil

1 large onion, finely chopped

3 cloves garlic, minced

1 carrot, finely diced

1 celery stalk, finely diced

1 can (14 oz or 400g) crushed tomatoes

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1/4 cup red wine (optional)

1 pound (450g) pasta of your choice (like fettuccine or pappardelle)

Fresh basil or parsley for garnish

Grated Parmesan cheese for serving

Instructions

Sauté Vegetables: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.

Cook Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess grease if necessary.

Add Tomatoes and Wine: Stir in the crushed tomatoes, tomato paste, and red wine (if using). Add the oregano, basil, red pepper flakes (if using), and season with salt and pepper to taste. Bring the mixture to a simmer.

Simmer Sauce: Reduce the heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally. The flavors will deepen and the sauce will thicken a bit.

Cook Pasta: While the sauce is simmering, cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain the pasta and reserve about 1 cup of pasta water.

Combine: Add the cooked pasta directly to the sauce and toss to coat. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.

Serve: Divide the pasta among plates or bowls. Garnish with fresh basil or parsley and sprinkle with grated Parmesan cheese.

Enjoy: Serve hot and enjoy your hearty Beef Ragu Pasta!
