Beef with Oyster Sauce

1 lb beef sirloin, thinly sliced against the grain

3 tablespoons oyster sauce

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, grated

1 bell pepper, sliced (any color)

1 cup broccoli florets

1 carrot, thinly sliced

2 green onions, chopped

1 tablespoon sesame oil

Salt and pepper to taste

Cooked rice, for serving

Marinate the Beef: In a medium bowl, combine the sliced beef with oyster sauce, soy sauce, and cornstarch. Mix well and let it marinate for at least 30 minutes to absorb the flavors.

    Prepare the Vegetables: While the beef marinates, wash and chop the bell pepper, broccoli, and carrot. Set them aside.

      Heat the Wok: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until it shimmers.

        Cook the Beef: Add the marinated beef to the hot pan in a single layer. Sear for about 2-3 minutes without stirring, allowing the beef to caramelize. Then stir-fry for an additional 3-4 minutes until the beef is cooked through. Remove the beef from the pan and set it aside.

          Stir-Fry the Vegetables: In the same pan, add the garlic and ginger, stirring quickly for about 30 seconds until fragrant. Add the bell pepper, broccoli, and carrot. Stir-fry for about 5-7 minutes or until the vegetables are tender but still crisp.

            Combine Ingredients: Return the cooked beef to the skillet, add the sesame oil, and season with salt and pepper. Toss everything together to combine and heat through for another 2 minutes.

              Serve: Transfer the beef with oyster sauce and vegetables onto a serving plate. Garnish with chopped green onions and serve hot over cooked rice.
