12 oz fettuccine or spaghetti

2 boneless, skinless chicken breasts (sliced)

4 slices of pancetta or bacon (diced)

2 large eggs

1 cup grated Pecorino Romano cheese (plus extra for serving)

3 cloves of garlic (minced)

Salt and black pepper (to taste)

2 tbsp olive oil

Fresh parsley (chopped, for garnish)

1/2 cup peas (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set aside the pasta.

    Sauté the Chicken: In a large frying pan over medium heat, add 2 tbsp of olive oil. Once hot, add the sliced chicken breasts, seasoning with salt and black pepper. Sauté for about 5-7 minutes or until the chicken is fully cooked and lightly browned. Remove the chicken from the pan and set aside.

      Cook the Pancetta: In the same pan, add the diced pancetta or bacon. Cook it until crispy, about 4-5 minutes. Add the minced garlic and cook for an additional minute, stirring constantly until fragrant.

        Create the Sauce: In a medium bowl, whisk together the eggs and grated Pecorino Romano cheese until combined and creamy. Add a pinch of salt and black pepper.

          Combine Ingredients: Lower the heat on the frying pan and add the cooked pasta directly into the pan with the pancetta and garlic mixture. Toss to combine. Quickly pour the egg and cheese mixture over the pasta, stirring vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is achieved.

            Add Chicken and Peas: Return the cooked chicken to the pan, along with the peas (if using), and toss everything together until heated through.

              Serve: Plate the carbonara and garnish with additional grated Pecorino Romano cheese and fresh parsley. Enjoy hot!
