1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons black peppercorns, coarsely crushed

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, minced

1 bell pepper (red or green), sliced

1 medium onion, sliced

2 scallions, chopped

1 tablespoon sesame oil

Marinate the Chicken: In a bowl, combine the chicken pieces with crushed black pepper, soy sauce, oyster sauce, and cornstarch. Mix well so that the chicken is fully coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

    Prepare the Stir-Fry: Heat vegetable oil in a large non-stick skillet or wok over medium-high heat. Once the oil is hot, add the marinated chicken. Sauté for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add a bit more oil if necessary. Add minced garlic and ginger, and sauté for 30 seconds until fragrant.

        Add Vegetables: Toss in the sliced onion and bell pepper. Stir-fry for about 3 minutes until the vegetables are tender but still crisp.

          Combine: Return the cooked chicken to the skillet, mixing it well with the vegetables. Drizzle with sesame oil and add chopped scallions. Stir everything together for another 2 minutes to allow the flavors to meld.

            Taste and Adjust: Season with salt if needed, adding more black pepper for extra heat if desired.
