2 large carrots, grated

1 large apple (preferably Granny Smith or Fuji), cored and diced

1/4 cup raisins or dried cranberries

1/4 cup walnuts, roughly chopped

1/4 cup fresh parsley, chopped

2 tablespoons honey

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the grated carrots, diced apple, raisins (or dried cranberries), and chopped walnuts.

    In a small bowl, whisk together the honey, Dijon mustard, apple cider vinegar, salt, and pepper until fully blended.

      Pour the dressing over the carrot and apple mixture. Stir well to ensure all ingredients are evenly coated.

        Gently fold in the chopped parsley for an added fresh flavor.

          Taste and adjust seasoning with additional salt, pepper, or honey if desired.
