Cheesesteak Tortellini in Rich Provolone Sauce

Ingredients
  

12 oz cheese tortellini (fresh or frozen)

1 lb thinly sliced beef (ribeye or sirloin)

2 tablespoons olive oil

1 medium onion, thinly sliced

1 bell pepper (red or green), thinly sliced

3 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

8 oz provolone cheese, shredded

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional for serving)

Instructions
 

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the sliced beef and season with salt and pepper. Cook until browned, about 2-3 minutes. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the onions and bell peppers, sautéing until softened, about 5-6 minutes. Stir in the minced garlic and cook for 1 more minute.

        Make the Sauce: Add the beef back to the skillet and pour in the beef broth. Bring to a simmer and let it reduce slightly for about 2-3 minutes. Lower the heat and stir in the heavy cream, provolone cheese, and Worcestershire sauce. Mix until the cheese has melted and the sauce is creamy. Season with additional salt and pepper to taste.

          Combine: Gently fold in the cooked tortellini until well coated with the sauce. Allow it to heat through for another 2-3 minutes.

            Serve: Plate the cheesesteak tortellini and garnish with fresh parsley and a sprinkle of grated Parmesan cheese if desired.
