Cheesy bacon potato breakfast casserole

6 large potatoes, peeled and diced

8 slices of thick-cut bacon, chopped

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup milk

4 large eggs

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with non-stick spray or butter.

    In a large skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and drain on paper towels. Leave about 2 tablespoons of the bacon fat in the skillet.

      In the same skillet, add the chopped onion and minced garlic to the bacon fat. Sauté for about 3-4 minutes until the onion is translucent.

        Layer half of the diced potatoes in the greased baking dish. Top with sautéed onion and garlic, followed by half of the cooked bacon. Sprinkle half of the sharp cheddar and mozzarella cheese on top.

          Add the remaining potatoes, then the rest of the bacon, and the rest of the cheeses.

            In a mixing bowl, whisk together the eggs, milk, paprika, salt, and pepper until well combined. Pour the egg mixture evenly over the layered casserole.

              Cover the baking dish with aluminum foil and bake for 40 minutes.

                Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and the potatoes are tender.

                  Remove from the oven and let it cool slightly. Garnish with freshly chopped parsley before serving.
