Ingredients
  

For the Burritos:

1 lb ground beef

1 small onion, chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup refried beans

1 tsp cumin

1 tsp chili powder

Salt and pepper, to taste

4 large flour tortillas

1/2 cup salsa (plus extra for serving)

1/2 cup sour cream (for serving)

For the Crispy Fries:

4 large russet potatoes, cut into fries

2 tbsp olive oil

1 tsp paprika

1/2 tsp garlic powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Beef Filling:

    - In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté until the onions are translucent.

      - Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        - Stir in the cumin, chili powder, salt, and pepper. Mix well and cook for another 2 minutes. Remove from heat.

          Prepare the Fries:

            - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

              - Toss the cut potatoes in a bowl with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.

                - Spread the fries in a single layer on the baking sheet and bake for 25-30 minutes, turning halfway through, until crispy and golden brown.

                  Assemble the Burritos:

                    - On a clean surface, lay out a flour tortilla. Spread 1/4 cup of refried beans on the lower half of the tortilla, then layer in 1/4 of the beef mixture and top with a generous sprinkle of cheese and salsa.

                      - Fold the sides inwards and then roll the tortilla from the bottom to the top, tightly enclosing the filling. Repeat for all tortillas.

                        Toast the Burritos:

                          - In the same skillet used for the beef, add a little oil over medium heat. Place the burritos seam-side down and cook until golden and crispy, about 2-3 minutes per side.

                            Serve:

                              - Serve the cheesy beef burritos hot with crispy fries on the side. Drizzle additional salsa over the burritos and add a dollop of sour cream. Garnish with chopped parsley on the fries for a fresh touch.
