1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 (10 oz) can enchilada sauce (red or green)

1 cup beef broth

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper to taste

12 oz cheese tortellini (fresh or frozen)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

Fresh cilantro or green onions for garnish (optional)

Sour cream for serving (optional)

In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess grease if necessary.

    Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes.

      Stir in the enchilada sauce, beef broth, cumin, chili powder, smoked paprika, salt, and pepper. Let the mixture simmer for about 5 minutes.

        Meanwhile, cook cheese tortellini according to package instructions; drain and set aside.

          Add the cooked tortellini to the beef enchilada mixture, stirring gently to combine.

            Preheat your oven to 375°F (190°C).

              In a baking dish, transfer half of the tortellini and beef mixture, then sprinkle half of the cheddar and mozzarella cheese on top. Add the remaining tortellini mixture and top with the rest of the cheeses.
