2 slices of whole grain or sourdough bread

1 cup cooked chicken, shredded or sliced

1 ripe avocado, mashed

1/2 cup shredded mozzarella cheese

1/4 cup Greek yogurt or mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh spinach leaves

Olive oil for grilling

Preparation of Spread: In a medium bowl, combine the mashed avocado, Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix until smooth and well combined.

    Assembling the Sandwich:
