Chicken Ramen Stir Fry (30 minutes)

2 packs of instant ramen noodles (discard seasoning packet)

1 lb (450g) boneless chicken breast, sliced into thin strips

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 tablespoon olive oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 cup snap peas

2 green onions, sliced

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Optional: red pepper flakes for heat

Instructions
 

Cook the Noodles: Bring a pot of water to a boil. Add the ramen noodles and cook for 3-4 minutes or until tender. Drain and toss with a teaspoon of sesame oil to prevent sticking. Set aside.

    Marinate the Chicken: In a bowl, combine the sliced chicken, soy sauce, oyster sauce, and a pinch of salt and pepper. Let it marinate while you prepare the vegetables.

      Prep the Veggies: Wash and slice the bell pepper, broccoli, and snap peas. Set them aside.

        Start Stir Frying: In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

          Cook the Chicken: Add the marinated chicken to the skillet. Stir-fry for about 5-6 minutes, or until the chicken is fully cooked and golden brown. Remove the chicken from the skillet and set aside.

            Sauté the Vegetables: In the same skillet, add the bell pepper, broccoli, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

              Combine: Add the cooked chicken back to the skillet along with the noodles. Toss everything together. Drizzle the remaining tablespoon of sesame oil and adjust seasoning with salt, pepper, and red pepper flakes if desired.
