1 pound ground chicken

1/2 cup finely chopped onion

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh sage, chopped

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon lemon juice

Natural sausage casings (optional, for traditional sausages)

Prepare the Chicken Mixture: In a large mixing bowl, combine the ground chicken, chopped onion, minced garlic, parsley, sage, smoked paprika, salt, black pepper, red pepper flakes (if using), and Parmesan cheese. Mix well until all ingredients are fully incorporated.

    Preheat the Grill or Skillet: If you’re using natural casings, soak them in water for 30 minutes before use. Preheat your grill to medium-high or heat a skillet over medium heat and add olive oil.

      Stuff the Sausages (Optional): If using casings, rinse the casing under cold water and fit one end onto a sausage stuffer. Stuff the casing with the chicken mixture, being careful not to overstuff. Twist into 6-inch links and tie off the ends. If you prefer patties, skip this step.

        Cook the Sausages: Place the sausages on the grill or in the skillet. Cook for about 6-8 minutes on each side, or until the chicken is cooked through and has an internal temperature of 165°F (75°C). If using patties, cook for about 4-5 minutes on each side.

          Finish with Lemon Juice: Just before removing from heat, drizzle the sausages with lemon juice for a bright finish.

            Serve: Remove from the grill or skillet and let rest for a couple of minutes. Serve with your choice of sides, like sautéed vegetables, or in a bun, with your favorite condiments!
