The heart of any great beef and broccoli dish lies in the quality of the beef. For this recipe, flank steak is the preferred cut. This choice is not arbitrary; flank steak is known for its rich flavor and relatively low fat content, making it ideal for quick cooking methods like stir-frying. When selecting flank steak, look for a piece that has a deep red color and a firm texture. The marbling should be consistent, and there should be minimal connective tissue.

Ingredients

1 lb beef flank steak, thinly sliced against the grain

3 cups broccoli florets

2 tablespoons vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium preferred)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1/2 cup beef broth

1 tablespoon sesame oil

1 teaspoon sugar

Salt and pepper to taste

Cooked white or brown rice, for serving (optional)

Instructions

Marinade the Beef: In a bowl, combine the sliced beef, 2 tablespoons of soy sauce, and 1 tablespoon of cornstarch. Stir well and let it marinate for about 15-20 minutes while you prepare the other ingredients.

Blanch the Broccoli: Bring a pot of water to a boil and add the broccoli florets. Blanch for 2-3 minutes until bright green and slightly tender. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

Prepare the Sauce: In a small bowl, mix the remaining soy sauce, oyster sauce, beef broth, sesame oil, and sugar. Set aside.

Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer. Sear for about 1-2 minutes without stirring, then stir-fry until the beef is browned and cooked through, about 2-3 more minutes. Remove the beef from the skillet and set aside.

Stir-fry the Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stirring quickly for about 30 seconds until fragrant.

Combine Ingredients: Return the beef to the skillet and add the blanched broccoli. Pour the prepared sauce over the mixture. Stir to combine everything well, cooking for an additional 2-3 minutes until the sauce thickens slightly and everything is heated through.

Season and Serve: Taste and season with salt and pepper as needed. Serve hot over cooked rice if desired.
