Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece ginger, grated

1/4 cup soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

2 teaspoons sugar

1/2 cup beef broth (can substitute with water)

1 tablespoon rice vinegar

Cooked jasmine rice, for serving

Sesame seeds and green onions, for garnish

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced flank steak with soy sauce, oyster sauce, cornstarch, sesame oil, and sugar. Toss well to ensure the beef is evenly coated. Let it marinate for about 30 minutes.

    Blanch the Broccoli: While the beef is marinating, bring a pot of salted water to a boil. Add the broccoli florets and blanch for 2 minutes until bright green and crisp-tender. Drain and set aside.

      Cook the Beef: Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil. Once hot, add the marinated beef in a single layer, ensuring not to overcrowd the pan. Cook for about 2-3 minutes on each side until browned. Remove the beef from the pan and set aside.

        Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.

          Combine Beef and Broccoli: Return the beef to the skillet. Pour in the beef broth and rice vinegar while scraping the bottom of the pan to incorporate all the flavorful bits. Stir in the blanched broccoli.

            Thicken the Sauce: Let the mixture simmer for an additional 2-3 minutes until the sauce has thickened slightly. Adjust seasoning with more soy sauce or sugar if desired.
