Cinnamon Sugar French Toast Muffins

Ingredients
  

1 loaf of French bread, cubed (about 4 cups)

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 cup brown sugar, packed

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp salt

1/4 cup granulated sugar

2 tsp ground cinnamon (for topping)

1/4 cup unsalted butter, melted (for topping)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with non-stick spray or butter.

    Prepare Bread: In a large mixing bowl, add the cubed French bread. Set aside.

      Mix Wet Ingredients: In a separate mixing bowl, whisk together the eggs, whole milk, heavy cream, brown sugar, vanilla extract, 1 tsp cinnamon, and salt until well combined.

        Combine: Pour the egg mixture over the cubed bread and gently fold until all the bread pieces are well coated. Let this mixture sit for about 10-15 minutes, allowing the bread to soak up the custard.

          Make Cinnamon Sugar Topping: In a small bowl, mix together the granulated sugar and 2 tsp of ground cinnamon. Set aside.

            Fill Muffin Tin: Spoon the soaked bread mixture evenly into the prepared muffin tin, filling each cup about three-quarters full. Drizzle the melted butter over the top of each muffin.

              Sprinkle Topping: Generously sprinkle the cinnamon sugar mixture over each muffin.

                Bake: Bake in the preheated oven for 20-25 minutes, or until the muffins are puffed and golden brown.

                  Cool and Serve: Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack. They are best enjoyed warm, but can also be stored in an airtight container for later.
