Cooking the pasta is a crucial step in preparing Cowboy Pasta Salad, as the texture of the pasta greatly influences the overall dish. For this salad, choose a short pasta shape, such as rotini or penne, which holds the dressing and ingredients well. The key to achieving the perfect pasta lies in cooking it al dente, which means the pasta should be cooked until it’s firm to the bite—this prevents it from becoming mushy when mixed with the other ingredients.

Ingredients

12 oz bowtie pasta

1 cup cherry tomatoes, halved

1 cup black beans, rinsed and drained

1 cup sweet corn, frozen or canned

1/2 cup red onion, finely chopped

1/2 cup bell pepper, diced (any color)

1/4 cup fresh cilantro, chopped

1/4 cup shredded cheddar cheese

1/4 cup BBQ sauce

1/4 cup ranch dressing

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool it down. Set aside.

Prepare the Vegetables: While the pasta is cooking, prepare the vegetables. In a large mixing bowl, combine the cherry tomatoes, black beans, sweet corn, red onion, bell pepper, and cilantro.

Mix the Dressing: In a separate small bowl, whisk together the BBQ sauce, ranch dressing, olive oil, garlic powder, and a pinch of salt and pepper until smooth.

Combine All Ingredients: Add the cooled pasta to the bowl with the vegetables. Pour the dressing over the pasta mixture and toss gently until everything is well coated.

Cheesy Delight: Sprinkle the shredded cheddar cheese over the top and give it another gentle toss to distribute the cheese.

Chill and Serve: Cover the pasta salad and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Serve cold or at room temperature.
