8 oz fettuccine or penne pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into strips

1 tablespoon Cajun seasoning

Salt and pepper to taste

1 onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Optional: crushed red pepper flakes for extra heat

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Season the Chicken: In a bowl, toss the chicken strips with Cajun seasoning, salt, and pepper until evenly coated.

      Sauté the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add chopped onion and sauté for about 3 minutes until translucent. Add minced garlic and red bell pepper, cooking for another 2-3 minutes until slightly softened.

          Make the Sauce: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream, then add the cherry tomatoes. Allow the mixture to simmer for about 5 minutes until the sauce thickens slightly.
