1 lb chicken sausage, sliced (mild or spicy based on your preference)

1 cup orzo pasta

4 cups chicken broth (low sodium)

1 cup heavy cream

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup spinach, fresh

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Sauté the chicken sausage: Heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausage and sauté until browned, about 4-5 minutes. Remove the sausage and set it aside.

    Cook the aromatics: In the same skillet, add the chopped onion. Sauté for about 3 minutes until translucent. Then, add the minced garlic and sauté for another 1-2 minutes until fragrant.

      Add the orzo and broth: Stir in the orzo and Italian seasoning. Pour in the chicken broth, bringing the mixture to a boil. Reduce heat to a simmer and cover, cooking for 8-10 minutes or until the orzo is al dente and most of the liquid has been absorbed.
