4 boneless, skinless chicken breasts

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Preheat the Oven: Preheat your oven to 400°F (200°C) for roasting the tomatoes.

    Prepare the Tomatoes: On a baking sheet, toss the halved cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out in a single layer and roast in the preheated oven for about 20-25 minutes or until they are blistered and slightly caramelized.

      Cook the Chicken: While the tomatoes are roasting, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and Italian seasoning.

        Sear the Chicken: Place the chicken in the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
