1 lb boneless, skinless chicken thighs, cut into bite-size pieces

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup all-purpose flour

1 cup panko breadcrumbs

Vegetable oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey

1 teaspoon lime juice

Marinate the Chicken: In a large bowl, mix the buttermilk with garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken pieces to the marinade, cover, and refrigerate for at least 1 hour or overnight for best flavor.

    Prepare the Coating: In one shallow dish, place the all-purpose flour. In another dish, beat the eggs (if desired) and set aside. In a third dish, spread out the panko breadcrumbs.

      Coat the Chicken: Take the marinated chicken pieces and first dredge each piece in flour, shaking off the excess. If using eggs, dip the floured chicken into the beaten egg, then coat it in panko breadcrumbs, pressing the breadcrumbs onto the chicken to ensure they stick.

        Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Whisk until smooth and well combined. Set aside.

          Heat the Oil: In a large, deep frying pan, heat about 2 inches of vegetable oil over medium-high heat. The oil is ready when a breadcrumb dropped into it sizzles immediately.

            Fry the Chicken: Carefully lower the breaded chicken pieces into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 4-5 minutes per side or until golden brown and cooked through. Use a slotted spoon to transfer the chicken to a paper towel-lined plate.

              Serve: Drizzle or toss the crispy chicken with the Bang Bang sauce. You can serve it over a bed of rice or as an appetizer with additional sauce on the side.
