Ingredients

1 lb salmon fillet, skin removed and cut into bite-sized cubes

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

Salt and pepper, to taste

1 tsp garlic powder

1 tsp smoked paprika

1/2 cup mayonnaise

1-2 tablespoons sriracha (adjust for spice preference)

2 tablespoons honey

1 tablespoon rice vinegar

Chopped green onions and sesame seeds for garnish

Instructions

Prepare the Salmon: Start by patting the salmon cubes dry with paper towels. Season them lightly with salt, pepper, garlic powder, and smoked paprika.

Set Up Breading Station: In one bowl, place the all-purpose flour. In a second bowl, add the beaten eggs. In a third bowl, pour the panko breadcrumbs.

Bread the Salmon: Dredge each salmon cube in the flour, then dip it into the beaten egg, and finally coat it with panko breadcrumbs, pressing gently to adhere. Repeat until all pieces are breaded.

Fry the Salmon Bites: Heat a deep skillet or frying pan over medium-high heat and add enough oil to cover the bottom. Once the oil is hot, carefully add the salmon bites in batches without overcrowding. Fry for 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain any excess oil.

Prepare Bang Bang Sauce: In a mixing bowl, combine mayonnaise, sriracha, honey, and rice vinegar. Stir until smooth and well combined. Taste and adjust the sriracha for desired spiciness.

Serve: Arrange the crispy salmon bites on a serving platter. Drizzle the Bang Bang sauce over the top or serve it on the side for dipping. Garnish with chopped green onions and sesame seeds for added flavor and presentation.
