1 lb fresh salmon fillet, skinless and boneless, cut into bite-sized cubes

1/4 cup honey

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/4 teaspoon red pepper flakes (optional)

1/2 cup cornstarch

Salt and pepper to taste

3 tablespoons vegetable oil (for frying)

Green onions, chopped (for garnish)

Sesame seeds (for garnish)

Marinate the Salmon: In a medium bowl, whisk together the honey, minced garlic, soy sauce, rice vinegar, sesame oil, and red pepper flakes. Add the salmon cubes to the marinade and coat well. Let it marinate for at least 10 minutes.

    Prepare for Frying: Meanwhile, place the cornstarch in a shallow plate. Season it with a little salt and pepper. Remove the salmon cubes from the marinade (reserve the marinade for later) and coat each piece in the cornstarch, shaking off any excess.

      Heat the Oil: In a large skillet, heat vegetable oil over medium-high heat. Once the oil is hot, carefully add the coated salmon bites in a single layer. Do not overcrowd the pan—cook in batches if necessary.

        Fry the Salmon: Cook the salmon bites for about 4-5 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to remove the bites and place them on a paper towel-lined plate to drain excess oil.
