Ingredients

4 boneless, skinless chicken breasts

8 slices of prosciutto or ham

8 slices of Swiss cheese

1 cup all-purpose flour

2 large eggs, beaten

2 cups breadcrumbs (preferably panko)

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 cup heavy cream

1 cup grated Swiss cheese (for the sauce)

1 tablespoon chopped fresh parsley (for garnish)

Instructions

Prepare the Chicken:

    - Preheat the oven to 375°F (190°C).

      - Place each chicken breast between two sheets of plastic wrap and pound them to about 1/2-inch thickness using a meat mallet.

        Assemble the Cordon Bleu:

          - Lay out the pounded chicken breasts on a clean surface. Season both sides with salt and pepper.

            - Place 2 slices of prosciutto or ham on each chicken breast, followed by 2 slices of Swiss cheese.

              - Roll the chicken breasts tightly from one end and secure them with toothpicks.

                Coat the Chicken:

                  - Set up a breading station: place flour in one shallow dish, beaten eggs in another, and breadcrumbs in a third.

                    - Dredge each rolled chicken in flour, shaking off the excess. Dip into the beaten eggs, allowing any excess to drip off, then roll in breadcrumbs until evenly coated.

                      Cook the Chicken:

                        - In a large oven-safe skillet, heat olive oil over medium-high heat.

                          - Add the breaded chicken rolls and cook until golden brown on all sides, about 3-4 minutes per side.

                            - Once browned, transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

Make the Creamy Swiss Cheese Sauce:

                                - In a saucepan over medium heat, add the heavy cream and bring to a gentle simmer.

                                  - Stir in the grated Swiss cheese and Dijon mustard, whisking until smooth and melted. Season with salt and pepper to taste.

                                    - Remove from heat and keep warm.

                                      Serve:

                                        - Once the chicken is cooked, remove toothpicks and slice each chicken roll into medallions.

                                          - Drizzle the creamy Swiss cheese sauce over the sliced chicken and garnish with freshly chopped parsley.
