For the pastry:

2 ½ cups all-purpose flour

1 teaspoon turmeric powder

½ teaspoon baking powder

½ teaspoon salt

½ cup cold unsalted butter, cubed

4-6 tablespoons cold water

For the filling:

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 Scotch bonnet pepper, finely chopped (adjust to taste)

1 teaspoon fresh thyme (or ½ teaspoon dried)

1 teaspoon allspice (pimento)

1 teaspoon salt

1 teaspoon black pepper

2 green onions, chopped

1 tablespoon soy sauce

2 tablespoons ketchup

1 tablespoon vegetable oil

Instructions
 

Make the pastry: In a large mixing bowl, combine the flour, turmeric, baking powder, and salt. Add the cubed butter and rub it into the flour until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Knead gently, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Prepare the filling: Heat vegetable oil in a skillet over medium heat. Sauté the chopped onions and garlic until translucent. Add the ground beef, breaking it up with a spoon. Cook until browned.

      Stir in the Scotch bonnet pepper, thyme, allspice, salt, black pepper, green onions, soy sauce, and ketchup. Cook for another 5 minutes until all ingredients are well combined and the mixture is heated through. Allow it to cool.

        Preheat the oven: Preheat your oven to 375°F (190°C).

          Form the patties: Roll out the chilled pastry dough on a lightly floured surface to about ¼ inch thick. Cut out circles (about 5 inches in diameter) using a cutter or a small bowl. Place a generous tablespoon of beef filling in the center of each circle. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.

            Bake the patties: Place the patties on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until golden brown.

              Serve: Allow the patties to cool slightly before serving. Enjoy them warm, with hot sauce if desired!
