Easy Asian Cucumber Salad

2 large cucumbers, thinly sliced

1 tablespoon salt

1 tablespoon sugar

3 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon chili garlic sauce (adjust to taste)

2 green onions, thinly sliced

1 tablespoon sesame seeds (toasted, for garnish)

Fresh cilantro leaves (for garnish)

Instructions
 

Start by placing the thinly sliced cucumbers in a large bowl. Sprinkle the salt over them, tossing to coat well. Let them sit for about 15 minutes to draw out excess moisture.

    After 15 minutes, drain any liquid that has accumulated in the bowl. Pat the cucumbers dry with a paper towel if necessary.

      In a small bowl, whisk together the sugar, rice vinegar, soy sauce, sesame oil, and chili garlic sauce until the sugar is dissolved.

        Pour the dressing over the cucumbers and toss well to coat all slices evenly.

          Add the sliced green onions to the salad and give it another gentle toss to combine.

            Let the salad marinate for at least 10 minutes before serving to enhance the flavors.

              Serve chilled, garnished with toasted sesame seeds and fresh cilantro leaves for a burst of flavor.
