2 large cucumbers, thinly sliced

1/4 red onion, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated fresh ginger

2 garlic cloves, minced

1 tablespoon sesame seeds

1/4 teaspoon crushed red pepper flakes (adjust to taste)

Fresh cilantro or scallions for garnish (optional)

Instructions
 

Begin by slicing the cucumbers. For a crunchier texture, you can sprinkle them with salt and let them sit in a colander for about 10 minutes to draw out excess moisture. Rinse and pat dry before use.

    In a large bowl, combine the rice vinegar, soy sauce, sesame oil, honey, grated ginger, garlic, and crushed red pepper flakes. Whisk together until well blended.

      Add the sliced cucumbers and red onion to the dressing. Toss gently to ensure all the vegetables are coated.

        Sprinkle sesame seeds on top and toss again lightly.

          Let the salad sit at room temperature for about 10-15 minutes to allow the flavors to meld. You can also refrigerate it for an hour for a colder salad.
