1 lb boneless, skinless chicken breasts

2 tablespoons chipotle ranch dressing (store-bought or homemade)

1 teaspoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (fresh or canned)

1 cup shredded cheddar cheese

1 cup chopped lettuce

1 medium tomato, diced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the chicken breasts, chipotle ranch dressing, olive oil, garlic powder, smoked paprika, salt, and pepper. Allow the chicken to marinate for at least 30 minutes (up to overnight in the fridge for more flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

      Prepare the Burrito Filling: While the chicken is resting, prepare the burrito fillings. In a large bowl, mix together the cooked rice, black beans, corn, shredded cheese, chopped lettuce, and diced tomato.

        Assemble the Burritos: Take a flour tortilla and lay it flat. Place a generous portion of the filling mixture on the center of the tortilla, followed by several slices of the grilled chicken. Sprinkle with additional cheese and cilantro if desired.
