Easy Cowboy Butter Chicken

1.5 lbs boneless, skinless chicken thighs

1/2 cup unsalted butter, softened

3 cloves garlic, minced

2 tbsp fresh parsley, chopped

1 tbsp fresh chives, chopped

1 tbsp Worcestershire sauce

1 tsp smoked paprika

1 tsp onion powder

1/2 tsp cayenne pepper (adjust for spice level)

Salt and pepper to taste

1 tbsp lemon juice

Lemon wedges for serving

Instructions
 

In a medium bowl, blend the softened butter with minced garlic, chopped parsley, chives, Worcestershire sauce, smoked paprika, onion powder, cayenne pepper, salt, and pepper. Mix well until all ingredients are fully incorporated.

    Prepare the chicken by seasoning both sides with salt and pepper.

      Preheat a large skillet over medium heat. Add a splash of oil to the skillet, and once hot, place the chicken thighs in the skillet.

        Cook the chicken for about 5 to 7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).

          Once the chicken is cooked, reduce the heat to low and add in the cowboy butter by dolloping it generously over the chicken. Allow it to melt and coat the chicken, cooking for an additional 2 to 3 minutes.

            Squeeze fresh lemon juice over the chicken before serving.

              Serve warm with lemon wedges on the side for an extra zesty kick.
