Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

For the Chicken Skewers:

1 lb boneless, skinless chicken thighs, cut into 1-inch pieces

3 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon vegetable oil

2 cloves garlic, minced

1 teaspoon ground coriander

1 teaspoon ground cumin

1/2 teaspoon black pepper

1 teaspoon red pepper flakes (optional, for spice)

8-10 wooden or metal skewers

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey or maple syrup

1 tablespoon sriracha (optional, for spice)

1 clove garlic, minced

Chopped peanuts and fresh cilantro for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, fish sauce, brown sugar, vegetable oil, minced garlic, ground coriander, ground cumin, black pepper, and red pepper flakes. Add the chicken pieces and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning. If using metal skewers, there's no need to soak.

      Make the Peanut Sauce: In a small saucepan over low heat, combine the peanut butter, coconut milk, soy sauce, lime juice, honey or maple syrup, sriracha, and minced garlic. Whisk until smooth and heated through, then remove from heat and set aside.

        Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).

          Assemble the Skewers: Thread marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

            Grill the Skewers: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has beautiful grill marks. The internal temperature should reach 165°F (75°C).

              Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Drizzle the warm peanut sauce over the chicken skewers and sprinkle with chopped peanuts and fresh cilantro. Serve with extra peanut sauce on the side.
