4 medium potatoes, diced

1 medium red onion, chopped

1 bell pepper (red or green), diced

1 cup cooked breakfast sausage, crumbled

4 large eggs

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Start by parboiling the diced potatoes in a pot of salted water for about 10 minutes until slightly tender. Drain and set aside.

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and bell pepper, cooking until softened, about 5 minutes.
