Easy Low Carb Chicken Casserole

Ingredients
  

2 cups cooked shredded chicken

1 cup broccoli florets (fresh or frozen)

1 cup cauliflower rice

1 cup shredded cheddar cheese

1 cup heavy cream

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

1/2 cup cream cheese, softened

1/4 cup chopped green onions (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the shredded chicken, broccoli florets, cauliflower rice, and half of the cheddar cheese. Stir well to mix.

      In another bowl, whisk together the heavy cream, cream cheese, garlic powder, onion powder, paprika, salt, and pepper until smooth.

        Pour the cream mixture over the chicken and vegetables, stirring until everything is well coated.

          Transfer the mixture to a greased 9x13 inch baking dish and spread it out evenly.

            Top with the remaining cheddar cheese.

              Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and golden on top.

                Remove from the oven and let it cool for a few minutes before garnishing with chopped green onions.

                  Serve warm and enjoy your delicious low carb meal!
