Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

12 jumbo pasta shells

1 cup ricotta cheese

1 ½ cups fresh spinach, chopped

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.

      Make the Filling: In a large mixing bowl, combine ricotta cheese, chopped spinach, ½ cup of mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well blended.

        Stuff the Shells: Spoon the cheese and spinach mixture into each jumbo pasta shell. Be generous with the filling!

          Assemble the Dish: Spread 1 cup of marinara sauce in the bottom of a 9x13 inch baking dish. Place the stuffed shells on top of the sauce, and pour the remaining marinara sauce over the shells. Lastly, sprinkle the remaining ½ cup of mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Serve: Let the stuffed shells cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
