Easy Spinach & Ricotta Stuffed Shells

Ingredients
  

20 jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese, divided

1 garlic clove, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 jar (25 oz) marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C).

    Cook the Shells: In a large pot, bring salted water to a boil. Add the jumbo shells and cook according to the package instructions until al dente. Drain and rinse with cold water to prevent sticking.

      Prepare the Filling: In a mixing bowl, combine ricotta cheese, chopped spinach, grated Parmesan cheese, half of the mozzarella cheese, minced garlic, salt, and pepper. Stir until well mixed.

        Stuff the Shells: Using a spoon, fill each cooked shell with the ricotta and spinach mixture until generously filled.

          Arrange in Baking Dish: Spread a thin layer of marinara sauce at the bottom of a 9x13 inch baking dish. Place the stuffed shells open side up in a single layer on top of the sauce.

            Top with Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells. Sprinkle the leftover mozzarella cheese evenly on top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your delicious meal!
