Easy Tuscan Chicken Pasta (40-Minutes)

2 chicken breasts, boneless and skinless

8 oz (225g) fettuccine or your favorite pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest for a few minutes before slicing.

      Sauté Vegetables: In the same skillet, add the minced garlic and cherry tomatoes. Sauté for about 2-3 minutes until the tomatoes start to soften.

        Create the Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and mix until melted and creamy. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

          Combine: Add the cooked pasta and spinach to the skillet, tossing to coat everything in the creamy sauce. Add slices of chicken on top and gently mix again until heated through.

            Serve: Plate your Tuscan chicken pasta, garnishing with fresh basil leaves and another sprinkle of Parmesan cheese if desired. Enjoy!
