Ingredients
  

2 boneless, skinless chicken thighs

2 tablespoons soy sauce

1 tablespoon sriracha (or to taste)

1 tablespoon sesame oil

4 cups chicken broth

2 packs of instant ramen noodles (discard flavor packets)

1 tablespoon miso paste

1 tablespoon ginger paste

2 cloves garlic, minced

1 tablespoon olive oil

1 cup coconut milk

2 teaspoons rice vinegar

1 tablespoon chopped green onions (for garnish)

1 teaspoon sesame seeds (for garnish)

Fresh cilantro leaves (for garnish, optional)

Salt and pepper to taste

Instructions
 

Marinate Chicken: In a bowl, combine the chicken thighs, soy sauce, sriracha, and sesame oil. Mix well and let marinate for at least 30 minutes.

    Cook Chicken: Heat a skillet over medium-high heat. Add a little olive oil, then add the marinated chicken thighs. Cook for about 5-7 minutes on each side or until fully cooked and caramelized. Remove from skillet and let rest before slicing.

      Prepare Broth: In a large pot, heat the remaining olive oil over medium heat. Add ginger paste and minced garlic, sautéing until fragrant (about 1 minute).

        Add Broth and Miso: Pour in the chicken broth and bring to a simmer. Stir in the miso paste until dissolved.

          Cook Noodles: Add the instant ramen noodles to the broth and cook according to package instructions, usually about 3-4 minutes.

            Make Creamy Sauce: In a separate bowl, whisk together the coconut milk and rice vinegar. Once the noodles are cooked, remove the pot from heat and stir in the creamy sauce mixture. Season with salt and pepper to taste.

              Serve: Divide the ramen into bowls. Top with sliced chicken, garnish with green onions, sesame seeds, and cilantro if desired.
