Ingredients

2 chicken thighs, boneless and skinless

2 cups ramen noodles

4 cups chicken broth

2 tablespoons sambal oelek (or any chili paste)

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon minced garlic

1 tablespoon grated ginger

1 cup baby spinach

1/2 cup sliced green onions

1 teaspoon black pepper

1 teaspoon red pepper flakes (adjust to taste)

1/4 cup heavy cream

1 tablespoon lemon juice

Soft-boiled eggs for garnish (optional)

Instructions

Marinate the Chicken: In a bowl, combine the chicken thighs with soy sauce, sambal oelek, sesame oil, minced garlic, grated ginger, black pepper, and red pepper flakes. Let it marinate for at least 30 minutes (or overnight for more flavor).

Cook the Chicken: Heat a skillet over medium heat and add the marinated chicken. Cook for about 6-7 minutes per side, until fully cooked and golden brown. Remove from heat, let it rest for a few minutes, then slice thinly.

Prepare the Ramen Noodles: In a large pot, bring the chicken broth to a boil. Add the ramen noodles and cook according to package instructions. Once cooked, drain and set aside, keeping some broth for later.

Make the Creamy Garlic Sauce: In a small saucepan over low heat, combine the heavy cream and lemon juice. Stir until warmed through, then add in more chili paste according to your preferred spice level; simmer to let flavors meld.

Combine Everything: In the pot with the remaining chicken broth, add the cooked ramen noodles and baby spinach. Stir until the spinach wilts slightly.

Serve: Divide the ramen noodles and broth into bowls. Top with sliced chicken, drizzle with creamy garlic sauce, and garnish with soft-boiled eggs, if desired. Finally, sprinkle chopped green onions on top for a fresh crunch.
