2 boneless, skinless chicken thighs

2 tablespoons vegetable oil

1 tablespoon gochujang (Korean chili paste)

1 tablespoon soy sauce

1 teaspoon sesame oil

4 cups chicken broth

2 packs of instant ramen noodles (discard seasoning packets)

1 cup shiitake mushrooms, sliced

2 green onions, sliced

2 cloves garlic, minced

1 tablespoon grated ginger

½ cup heavy cream

1 tablespoon butter

Salt and pepper to taste

Sriracha and chili flakes for garnish

Soft-boiled eggs (optional)

Instructions
 

Marinate the Chicken: In a bowl, mix gochujang, soy sauce, sesame oil, and a pinch of salt. Add the chicken thighs, ensuring they are well coated. Let marinate for at least 30 minutes.

    Cook the Chicken: In a skillet over medium heat, add vegetable oil. Once hot, add the marinated chicken thighs and cook for about 6-7 minutes on each side until cooked through and caramelized. Remove and let rest before slicing.

      Prepare the Broth: In a large pot, heat a tablespoon of oil over medium heat. Add minced garlic and grated ginger, sauté until fragrant (about 1 minute). Add the chicken broth and bring to a simmer.

        Add Noodles and Mushrooms: Once the broth is simmering, add the ramen noodles and sliced shiitake mushrooms. Cook until the noodles are tender, following the package instructions (about 3-4 minutes).

          Make the Creamy Garlic Sauce: In a small saucepan, melt butter over low heat. Add remaining minced garlic and cook for about 1 minute. Pour in heavy cream, stir and let simmer for 2-3 minutes. Season with salt and pepper, then set aside.
