1.5 lbs chicken thighs or breasts, boneless and skinless

1 lb baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the halved baby potatoes, season with salt, and cook for about 10-12 minutes until they are golden and tender, stirring occasionally. Remove the potatoes from the skillet and set aside.

    Season the Chicken: While the potatoes are cooking, season the chicken with paprika, thyme, oregano, salt, and pepper on both sides.

      Cook the Chicken: In the same skillet, add another tablespoon of olive oil and increase the heat to medium-high. Add the seasoned chicken pieces and cook for 5-7 minutes on each side or until the chicken is cooked through and golden brown. (Internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set aside.

        Make the Garlic Butter Sauce: Lower the heat to medium. In the same skillet, add the butter and minced garlic. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.

          Combine Ingredients: Return the chicken and cooked baby potatoes to the skillet with the garlic butter sauce. Toss everything together to coat the chicken and potatoes with the melted garlic butter. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

            Serve: Remove from heat, sprinkle with fresh parsley, and serve with lemon wedges on the side for a burst of freshness.
