1 lb (450g) steak (ribeye or sirloin), cut into bite-sized pieces

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Potatoes: Begin by boiling a pot of salted water. Once boiling, add the halved baby potatoes and par-cook for about 10 minutes, or until slightly tender. Drain and set aside.

    Cook the Steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak pieces generously with salt and pepper. Once the oil is hot, add the steak to the skillet in a single layer. Sear for about 3-4 minutes, turning occasionally, until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

      Sauté the Potatoes: In the same skillet, add the par-cooked baby potatoes. Allow them to sit undisturbed for a couple of minutes to get golden and crispy on one side. Then, stir and cook for another 5 minutes, until they are nicely browned and tender.

        Add Garlic Butter: Lower the heat and push the potatoes to one side of the skillet. Add the butter, minced garlic, thyme, and rosemary to the empty side of the skillet. Stir until the butter is melted and the garlic is fragrant, about 1-2 minutes.

          Combine Ingredients: Return the cooked steak to the skillet and toss everything together to coat in the garlic butter. Cook for an additional 2 minutes to ensure everything is heated through.
